You can't pack a freezer. Pack this instead.

Everything you pack works on the outside of the bottle. The wine trade's own school, WSET, has an ice-bucket rule that says why: air insulates.

So the cold in that cooler is all the cold you brought. Once the cork is out, the bottle gives it back through the glass. The one place left to hold cold is inside the bottle.

Why it ran out

The cooler is not the villain. It did the one thing it does: it held.

Held is all any insulated thing can do: a cooler, a sleeve, a bucket. Out here the question was never how to make wine cold. It was how to keep the cold you already paid for at home.

Liz Lovery puts it plainly: "Insulated wine sleeves are nice but they're a supplement, not a replacement." A supplement to what? To the cooler, and the cooler is the thing that just ran out.

The best answer a boat has is a bag on a rope over the side, and it names the price: a huge mass of cold water, and somewhere to hang the bag. A lake has both. A blanket on the grass has neither. And every one of these fixes works through the same wall: the bottle's glass, and a layer of the air WSET just called an insulator.

The one published measurement here is for a glass, not a bottle. TU Darmstadt, 2024: a white poured at 46°F (8°C) in an 84°F (29°C) room reached 52°F (11°C) in five minutes. Where you are sitting is not that room, no bottle figure has ever been published, and we will not invent one.

The physics

We are not going to tell you ice does not work. It is superb at its job and not our rival.

That second number is small, and it is meant to be. Cooling power is not the contest and we are not entering it. What ice charges is water. A 5 oz pour (150 ml):

68°F → 50°F 19.2 g ice · 11.4% water
72°F → 46°F 26.9 g ice · 15.2% water

Both figures are for cooling a glass down. Holding a cold glass cold is a different job, so we say so here, next to the numbers. Holding melts less ice. Never none. All of it lands in the glass.

Dave Arnold, via SevenFifty Daily: "There is no chilling without dilution." The steel adds nothing, in either job. Zero dilution is the entire claim, and it is a trade: less raw cold than ice, and not a drop of water in the glass.

The gear

The Lindner & Co Wine Chiller is a freeze-it-before-you-leave product.

If that is a dealbreaker, better you find out on this screen than at the trailhead. Hiding it only buys us a return.

It needs at least 10 to 15 minutes in the freezer at home, and longer is better. It can live there, so for most people it is already frozen when the cooler comes out. It travels beside the bottle, and it goes into the bottle the moment you open it, while the bottle is still cold from the cooler.

From a bottle that came out of the cooler cold, out on the grass, plan on around ninety minutes of held cold. Not longer.

Freeze it. Take it. Use it at the cork.

Specs

The Lindner & Co Wine Chiller is a rod of 304 food-grade stainless steel, chrome finish. It goes down inside the opened bottle, visible through the glass. On top, a clear acrylic pour spout: the spout is what aerates, the steel never does. A stopper is included.

It is not solid. A pour channel runs through it, so you pour through it and the steel is in contact with the wine the whole time it is moving. No bottle wall in the way, no insulating air, nothing going into the glass but wine.

It fits 99% of bottles, screw-caps included. It is dishwasher safe.

For scale: Corkcicle asks for a 90-minute freeze and is hand-wash only. The Amazon generic asks for two hours. Ours asks for 10 to 15 minutes at the least, and it can simply live in the freezer.

The category's number-one one-star complaint, in the buyer's own capitals: "It DOES NOT chill down a warm bottle." Correct. Neither does this one. It goes into a bottle that is already cold, at the cork.

Questions from the trail
"There is no freezer where I am going."
Correct. You freeze it at home before you leave, and it lives in the freezer between trips. That is the whole discipline.
"Will it change the wine?"
Ice does. The steel adds nothing. The acrylic spout on top aerates the pour, and that is the only change you will taste. Dino Borri, of Eataly, on ice in wine: "not necessarily rude", but "not a suggested way."
"Will it fit my bottle?"
99% of bottles, screw-caps included. Not all, and we do not say all.
"Can I still pour?"
Through the channel and out through the acrylic spout, which aerates.
"Cleaning it, out there?"
You don't. Stopper in, take it home, dishwasher.
"Is it a gimmick?"
Fair question. The answer is the arithmetic above. Steel at about 14 joules a gram is not a cooling engine, it is a brake, and it adds no water. That is all it claims.

One more thing it cannot do: light. Keep the bottle in the shade. The steel does nothing about sun. Doug Woodward, in Young Gun of Wine: "room temperature in Burgundy is not the same as room temperature in Texas."
