Friday. The bottle I forgot on the counter.
Kitchen counter → back deck · Early fall · 72°F inside
Pour 1 — 6:42 PM
Nose: Lifted citrus blossom, clean mineral edge
Palate: Bright acid, white peach, long chalky finish
Temp: 46°F — out of the fridge, a few minutes on the counter while I looked for ice

Two glasses on the counter. Freezer drawer open for ice. Tray empty — forgot to fill it again. So the bottle came out of the fridge on its own, and I timed what happened next.

First glass carried out to the deck. September light low through the trees. Everything the winemaker meant, right there.

Pour 2 — 7:15 PM
Nose: Flatter. The blossom is fading.
Palate: Softer acid, fruit going broad
Temp: 52°F — already climbing

Thirty-three minutes. The bottle has been standing on the countertop in 72-degree air, right where the glasses were. TU Darmstadt measured 46°F to 52°F in five minutes — for 150 ml in a glass, in 84°F air. A full bottle in a cooler room is slower. But the direction is the same. You can taste it.

Pour 3 — 7:48 PM
Nose: Gone flat. The mineral edge has vanished.
Palate: Broad, blunt, alcohol pushing through
Temp: 57°F — room is winning

Just over an hour since the cork came out. Same bottle. Same glass. But 57°F has rewritten the tasting note. Doug Woodward's line fits — room temperature in Burgundy is not the same as room temperature in Texas. On this counter, it is not the same as the fridge either.

Pour 4 — 8:20 PM
Verdict

The last glass is not the wine you opened. The problem was never the wine. It was the hour and a half between the first pour and the last — a bottle forgotten on a counter, warming one degree at a time toward a glass you would not have chosen.

Ice would have held it. The tray was empty. And ice in the glass is water in the wine — bringing one glass back down costs 10 to 15 percent of its volume in meltwater. Dave Arnold says it flat: there is no chilling without dilution. A bucket does the job if you own enough ice to fill it three-quarters, ice and water in equal parts — the WSET rule, because air insulates. A sleeve helps, but Liz Lovery calls it a supplement, not a replacement.

Raw cooling is not close. Melting ice soaks up 333.5 joules per gram; frozen steel gives back about 14. More than twenty to one, ice. Steel cannot bring a bottle down. But steel does not melt. That is the trade — a brake instead of an engine, and nothing in the glass but wine.

The Tool — Next Friday
