
You keep the white in the fridge and pour it straight from the door. Reading one is that fridge: 3–5°C. WSET puts aromatic whites at 8–12°C. Colder than the wine wants — and that only matters while the bottle is inside.
Reading two is on the thermostat. Doug Woodward, Young Gun of Wine: “Room temperature in France is not the same as room temperature in Australia.” Check your own thermostat. If it reads 20°C, that is 8 degrees above the top of the wine’s window — and an open bottle on the worktop is heading for that number.

Back in the fridge between glasses. It works — the fridge takes the bottle back under 6°C, and WSET says below that the flavours are masked. You are up every time a glass runs low, to keep it wrong the other way.
The ice bucket. WSET’s rule: three-quarters full, equal parts ice and water, because air insulates. A few cubes rattling in a bucket is decoration. Done properly it is a wet, dripping object on the table, and the label comes off in your hand.
Ice in the glass. Dave Arnold: “There is no chilling without dilution.” The sum is further down — 11–15% of the glass becomes water. Dino Borri of Eataly calls it “not a suggested way.”
The sleeve. Liz Lovery: “Insulated wine sleeves are nice but they’re a supplement, not a replacement.”
Each one trades something — the window, the wine, or the table. None of them was built to hold.
One number, measured and published. Kannapinn, Kohler and Schäfer at TU Darmstadt (Applied Sciences 2024) measured 150 ml of wine in a glass. Room at 29°C. Wine poured at 8°C was at 11°C in five minutes and past 12°C by ten.
That is a glass, not a bottle. They did not measure a bottle, so this page will not invent a bottle number. What it establishes is the direction and the scale: warm room, small volume, no help — the cold leaves fast enough to measure. An open bottle standing in the same room is going the same way, only more slowly, with nothing between it and the room.
Something has to stand between the bottle and the room.

Nothing melts, so nothing is added. Zero dilution. What comes out is what went in.
Stopper in between pours. Rod back in the freezer after. Dishwasher safe. It fits 99% of bottles, screw-caps included — not all of them, and anyone who tells you all of them is guessing.

The dilution sum — if you ice them. Melting ice carries 333.5 J per gram, and every gram it gives up goes into the wine — the cooling and the water are the same event. Run it: 150 ml from 20°C to 10°C melts 19.2 g — 11.4% water. From 22°C to 8°C, 26.9 g — 15.2%. An honest 11–15% band. Those figures describe cooling a glass down with ice. The steel cools without melting. Nothing ends up in the glass.
The claim this page will not make. A competitor’s one-star review reads, verbatim: “It DOES NOT chill down a warm bottle.” This one is not instant either, and Lindner & Co has never said it is. Give it 10 to 15 minutes to bring the wine to serving temperature; from there it holds for up to three hours. That is the job.
